Lots to be learned here; we can see how the gas and dust clouds, being subject to different forces, separate. We can see how comets evaporate. We can see what comets are made from (you know, spectroscopy and stuff).

Is the range of velocities known for these jets?

It can be inferred from the observations in this article, but whether anyone has actually done that or not I do not know. If I get some time I will look at the literature and see if there is any information on that.
